Energy Bites | Easy & Healthy Afternoon Snack

I recently ran across the most amazing afternoon snack. It is super yummy and packed with protein. Most importantly, I always have the ingredients on hand.

Energy Bites are an adaptable, no-bake, sweet treat that are quick and easy to make. You can vary the ingredients based on what you have in the cupboard and the final snack will still be yummy. When my son was too hungry to wait, I tossed the ingredients in a bowl and fed him a few spoonfuls before refrigerating.

No-Bake Energy Bites

Prep Time: 10 minutes
Total Time: 10 minutes
Yield: About 2 dozen

Ingredients

1 cup dry oatmeal
1/2 cup toasted coconut flakes
1/2 cup peanut butter
1/2 cup ground flaxseed or wheat germ
1/2 cup chocolate chips (I mixed white and dark chocolate)
1/3 cup honey or agave nectar
1 tsp. vanilla extract

Directions

Stir ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.

Once chilled, roll into balls. Store in an airtight container and keep refrigerated for up to 1 week.
